Grab a few rotisserie chickens, remove the meat and keep the pile of bones, cartilage, feet and even some skin.
Put it in your InstantPot along with carrots, onions, parsley, garlic and celery fill with filtered/bottled/distilled water (to about 1" below the max line). Add some vinegar (I use raw apple cider vinegar and kombucha vinegar) to help extract the minerals. I add about 1 teaspoon of fresh ginger juice too - this is optional.
Cover and turn on high pressure for 120 minutes.
Strain (I use a tight weaved cheese cloth) and put in containers. You can also put it in ice cube trays and freeze it.
